Sujuk with eggs


Sujuk is Middle Eastern beef sausage dried with several spices black pepper, cumin, garlic, paprika, etc. You can find sujuk at Middle Eastern stores.And the breads with Acuka(which made at home )Acukas recipe can change to region to region.the also call it Muhammara

Acuka

200gr roasted red peppers, processed (not too finely)
2/3 cup fine fresh breadcrumbs
1/3 cup walnuts, toasted lightly and chopped fine
2 to 4 garlic cloves, minced
1/2 teaspoon salt
1 tablespoon fresh lemon juice
1 teaspoon ground cumin
1/2 teaspoon hot red pepper flakes
3/4 cup extra-virgin olive oil
Combine all the ingredients and let stand for at least 2 hours to let ther flavours mix and develop. Serve with toasted pita bread, triangles.

Yayla (yogurt) soup

Yogurt soup is a popular comfort dish in Turkey also made in all regions.It's also a very common sick soup; even inhaling the strong smell of mint or(tarragon makes you feel better. Although Turks love this soup.who are not in good terms with yogurt, may not like this. My mum used to cook me when i was ill.And i realy like this soup and i cook maybe 2 or 3 times a week.

1/4 cup rice
5 cups of water (if you wish you can use half chicken stock, half water)
2 cups of plain yogurt
1 egg
2 tbsp flour
2 tbsp butter
2 tsp dried mint or tarragon(i never tried with tarragon) i prefer mints
1 tsp salt
1tsp red peper

Boil rice in 5 cups of water with salt until (very) soft.-In a bowl, beat the egg and flour well, and then add yogurt and mix. With 1-2 tbsp water lighten up this mixture.-Put the yogurt mix in a pot and start cooking on very low. It's important that you start with low heat, otherwise yogurt would curdle. Give yogurt some time to get used to heat. Cook on low heat for approximately 15 minutes and keep stirring.-Slowly pour in rice along with water into the soup. Keep stirring. First let it boil on medium and then turn it down and cook for another 10 minutes.-Heat butter in a pan. Once it sizzles, add mint flakes and red peper stir for 20-30 seconds (don't let it burn). Then, pour it into soup.Bon appetit

Eggplant mousakka


Eggplant mousakka is a very common dish during the summer months in Turkey. It is usually served as a main dish for lunch or supper with pilaf (rice) and cacik (cucumer/yogurt salad).And is one of my favorite dish.I will give the original recipe but i make some changes while im cooking.

6 medium size eggplant
3 1/2 tablespoons olive oil
(250 g) ground meat
2 small size onions
2 medium size tomatoes
2 tsp tomato paste
2 tsp sea salt
1/4 tsp freshly ground black pepper
1/2 cup water
2-3 sprigs parsley

Pare eggplants in strips and cut into 1 cm thick slices(i prefer to cut in small pieces cos its more easy to serve and eat) Brown lightly in oil in a non-stick pan until lightly browned on both sides. Remove from pan, reserving oil. Layer eggplants in a shallow pan.Add ground meat and finely chopped onions to oil left in pan; stir. Brown for 8-10 minutes or until meat is crumbly; drain.Stir in 1 diced tomato, tomato paste, salt and pepper. Cover and simmer for 4-5 minutes. Add water, mixing well. Bring to boil.Pour mixture over eggplants and spread. Top with sliced tomato. Cover and simmer for 15-20 minutes (or bake in a moderate oven for 15 minutes) until tender.Remove from heat. Garnish with parsley leaves before serving. Serve hot.

Coco pudding with cake


3 cups of milk(3 kap süt)

3 tbsp corn starch(3yemek kaşığı mısır nişaştası)

5-6 tbsp sugar (5 yada 6 yemek kaşığı şeker isteğe göre değişir)

3 tbsp coco(3 yemek kaşığı kakao)

Cake(hazır kek)

Mix all the ingredients well in a pot and cook on medium until the mixture thickens.pour in to big bowl put cake and pour the rest puding. First let it cool on the counter then put them in the refrigerator.You can serve with ice cream or caramel sauce and strawbery like me.Bon a petit

Ispanach borek with lemonade


Taze naneyle yapılmış greyfurtlu limonata.Ve hazır yufkayla çok basitçe yapılmış bir ıspanaklı börek. Bütün malzemeleri çiğ olarak yoğurup yarım su bardağı su ve yarım çay bardağı sıvı yağ ile yağladığımız yufkaların içine sarıyoruz yüksek derecedeki fırında pişiriyoruz afiyet olsun

Lemonade with fresh mint and spinach börek.Börek is a general name for phyllo pastry filled with various things most common of which are feta cheese, ground meat, potato, and spinach. It's usually easy to find phyllo dough in Turkey since there's a yufkacı, phyllo dough store, in every neighborhood. You can fold them into squares, rectangles, or triangles.I didnt have so much time.I made easier.
1 onion (1 adet soğan)
1 tsp salt (tuz)
1 tsp black peper (karabiber)
1 tsp red peper (kırmızı biber)
1/2 kl spinach(yarım kg ispanak)
1/2 glass water
!/2 glass liquid oil( i prefer olive oil to cook everything)
mix water and oil and spread on yufkas mix all the other ingrediens and put in yufka.decorate with susame if you want.bake them in high degree
